Ingredients
- 3 tablespoons oil
- 3 chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- 5 cups milk
- 4 cups penne pasta, uncooked
- 1 cup pepper jack cheese, shredded
Directions
Step 1 –Heat the oil in a large pot over high heat.
Step 2 –Add in the chicken and cook until there is no pink visible, about 5-6 minutes.
Step 3 –Transfer the chicken from the pot.
Step 4 –Add in the bell peppers and onion, cooking until the onion is translucent and soft, about 6 minutes.
Step 5 –Add the chicken breasts back into the pot.
Step 6 –Season with the salt, pepper, chili powder, cumin, and garlic powder. Stir the mixture until everything is evenly coated, about 30 seconds.
Step 7 –Add in the milk and penne, stirring it constantly to prevent any pasta from sticking to the bottom.
Step 8 –Cook until the pasta is completely cooked, the milk has been reduced to a thick sauce that coats the pasta, and the chicken is cooked through at 165 degrees F, about 20 minutes.
Step 9 –Add in the cheese and mix until it is melted.
Step 10 –Remove the pot from the heat.
Step 11 –Serve.
