It’s-A-Miracle Bake

When everything else seems to be unraveling around you, don’t sweat about dinner. It’s-A-Miracle Bake is here to save you from your worries! Well, your mealtime ones, at least. This super simple layering of tender pork chops and sautéed veggies makes for a very hands-off yet delicious dinner. So, while you’re balancing all the plates of your daily chaos, take one down and serve It’s-A-Miracle Bake. It’s one thing you know will be taken off your plate in a jiffy!

Ingredients

  • 8 pork chops, boneless, thinly sliced and pounded to your desired thickness
  • salt, to taste
  • pepper, to taste
  • olive oil, to taste
  • 2 medium carrots, grated
  • 3 onions, sliced into rings
  • 3 slices Gouda cheese
  • 3 tablespoons mayonnaise
  • dried oregano, to taste
  • 3 mushrooms, halved
  • fresh oregano leaves, to taste, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –Season the pork chops with the salt and the pepper.

Step 4 –In a skillet, add the olive oil and the seasoned pork chops and sear until they are lightly browned. It is okay for them not to be cooked through.

Step 5 –Place the seared pork chops on a plate.

Step 6 –In the same skillet, add more of the olive oil and the carrots and sauté until they are tender.

Step 7 –Transfer the sautéed carrots to a plate.

Step 8 –In the same skillet, add more of the olive oil and the onion rings and sauté until they are tender.

Step 9 –Spread 1/2 of the carrots over the bottom of the prepared baking dish and top with 4 of the seared pork chops.

Step 10 –Top the pork chops with 1/2 of the onions and 1/2 of the cheese.

Step 11 –Spread the mayonnaise over the cheese layer and season with the dried oregano.

Step 12 –Repeat the layers once, starting with the carrots and ending with the cheese.

Step 13 –Sprinkle the mushrooms over the cheese layer.

Step 14 –Bake the pork bake until the meat is tender, about 40 minutes.

Step 15 –Transfer the baking dish to a wire rack and let the pork bake rest, about 5 minutes.

Step 16 –Garnish the pork bake with the oregano leaves and serve.
