Jackie Kennedy’s Caesar Salad

Ingredients

For the croutons:

  • 4 cups white bread, torn into pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • freshly ground black pepper, to taste

For the dressing and the salad:

  • 1 medium clove garlic, minced or grated
  • 1/4 cup grated plus 1/2 cup shaved parmesan cheese, divided
  • 2 tablespoons fresh lemon juice
  • 1/4 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1/2 tablespoon Dijon mustard
  • 1 teaspoon anchovy paste, can substitute Worcestershire sauce
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 romaine hearts or 1 large head romaine lettuce, torn or chopped into pieces

Directions

Step 1 –Preheat the oven to 300 degrees F.

Step 2 –Line an 18×26-inch baking sheet with parchment paper.

Step 3 –In a medium bowl, add the bread pieces, 2 tablespoons of the olive oil, 1/2 teaspoon of the salt, the garlic powder, and the black pepper and toss to combine.

Step 4 –Place the seasoned bread pieces on the prepared baking sheet and bake until they are evenly golden-brown and crisp, about 15 minutes.

Step 5 –Transfer the baking sheet to a wire rack and let the croutons cool until they are very crispy, about 5-10 minutes.

Step 6 –In a large bowl, add the garlic cloves, 1/4 cup of the grated parmesan cheese, the lemon juice, the mayonnaise, the Greek yogurt, the remaining olive oil, the Dijon mustard, the anchovy paste, the remaining salt, and the remaining 1/4 teaspoon of black pepper and whisk to combine.

Step 7 –In six salad plates or bowls, evenly add the romaine pieces, the remaining parmesan cheese shavings, and the homemade croutons.

Step 8 –Serve the salad drizzled with the dressing.
