Ingredients
- 2 tablespoons butter
- 1/4 cup onion, chopped
- 1/3 cup celery, chopped
- 1/4 cup green pepper, chopped
- 1 (14.5 ounce) can diced tomatoes
- 1 1/2 cups chicken broth
- 2/3 cup long-grain white rice
- 1 teaspoon dried basil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon hot sauce
- 1 bay leaf
- 2/3 cup chicken breast, diced and cooked
- 2/3 cup Italian sausage, cooked and crumbled
- 2/3 cup shrimp, peeled and cooked
Directions
Step 1 –Melt the butter in a saucepan over medium heat on the stove-top.
Step 2 –Stir in the onion, celery, and green pepper, and cook until the vegetables are softened, about 5 minutes.
Step 3 –Pour in the diced tomatoes, chicken broth, and rice.
Step 4 –Season the dish with the basil, garlic powder, pepper, hot sauce, and the bay leaf.
Step 5 –Bring the pan to a boil over medium-high heat.
Step 6 –Turn the heat to medium-low and cover the dish.
Step 7 –Simmer until the rice is cooked according to package directions.
Step 8 –When the rice has cooked, mix in the chicken, sausage, and shrimp.
Step 9 –Simmer until everything is heated through, about 2 minutes.
Step 10 –Take out the bay leaf before serving.
