Just-Like-Ma’s Lemon Blueberry Loaf

For example, every time we bite into a slice of Just-Like-Ma’s Lemon Blueberry Loaf it takes us right back to Friday night pasta nights with this special treat as our dessert. Now, this isn’t the exact same recipe that our momma used, she kept hers secret, but this moist and fluffy version, bringing hints of tart blueberries and citrusy lemon, is just about as close as you can get. And we’d like to think we nailed the lemony sugar glaze on top, down to a tee. So, when you’re missing home a little, grab a slice of Just-Like-Ma’s Lemon Blueberry Loaf. Ingredients

For the loaf:

  • 1/3 cup butter, melted
  • 1 cup sugar
  • 3 tablespoons lemon juice
  • 2 large eggs, room temperature
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup 2% milk
  • 1 cup fresh or frozen blueberries
  • 1/2 cup nuts, chopped
  • 2 tablespoons lemon zest, grated

For the glaze:

  • 2 tablespoons lemon juice
  • 1/4 cup sugar

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease an 8×4-inch loaf pan.

Step 3 –In a bowl, beat the butter, 1 cup of the sugar, 3 tablespoons of the lemon juice, and the eggs together.

Step 4 –In another bowl, combine the flour, the baking powder, and the salt together.

Step 5 –Stir the flour mixture into the egg mixture, alternating with the milk and beating well after each addition.

Step 6 –Fold the blueberries, the nuts, and the lemon zest into the batter.

Step 7 –Pour the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 1 hour-1 hour 10 minutes.

Step 8 –Allow the loaf to cool in the pan and then invert it onto a wire rack to cool slightly.

Step 9 –In a bowl, whisk the remaining lemon juice and the remaining sugar together and then drizzle the glaze over the warm loaf.

Step 10 –Let the loaf cool completely.

Step 11 –Slice and serve.
