Keto Bacon Cheeseburger Bake

Ingredients

For the ground beef layer:

  • 3 slices bacon
  • 1 (1.65-pound) package ground beef
  • 1 medium onion, quartered and sliced
  • 1 clove garlic, crushed
  • salt, to taste
  • black pepper, to taste
  • 2 ounces cream cheese

For the cheese sauce:

  • 3 medium eggs
  • 1/2 cup heavy whipping cream
  • 1 1/2 cups cheddar cheese, shredded, divided
  • 2 tablespoons prepared mustard
  • salt, to taste
  • black pepper, to taste
  • 2 dill gherkin pickles, sliced
  • salad, optional, to taste, for serving

Directions

Step 1 –In a large skillet, add the bacon and cook until slightly crisp.

Step 2 –Transfer the bacon to a paper-towel-lined plate to drain and cool.

Step 3 –Use a knife to dice the bacon.

Step 4 –In the same skillet over medium-high heat, add the ground beef, the onion, and the garlic, and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.

Step 5 –Add the salt, the black pepper, and the cream cheese to the ground beef mixture and cook, stirring occasionally, until the cream cheese has melted, about 2-3 minutes.

Step 6 –Pour the ground beef mixture into a 9×9-inch baking dish and sprinkle with the diced bacon.

Step 7 –In a large bowl, add the eggs, the heavy whipping cream, 1 cup of the cheddar cheese, the prepared mustard, the salt, and the black pepper and mix until well-combined.

Step 8 –Pour the cheese sauce mixture over the beef mixture.

Step 9 –Evenly place the pickle slices on the top of the cheese sauce mixture.

Step 10 –Evenly sprinkle the remaining cheddar cheese over the pickle slices.

Step 11 –Bake the cheeseburger bake until the cheese is golden and crispy, about 15 minutes.

Step 12 –Serve the cheeseburger bake with the salad.
