Key Lime Cake

Ingredients

For the cake:

  • 1 cup canola oil or olive oil
  • 3 large eggs
  • 1 1/3 cups whole milk
  • 2 tablespoons fresh lime zest
  • 1 tablespoon fresh lime juice
  • 2 cups sugar
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt

For the frosting:

  • 1/2 cup cut butter, softened
  • 1 (8-ounce) package cream cheese, softened
  • 4-4 1/2 cups powdered sugar
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon fresh lime zest
  • lime slices, to taste, for garnish

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Spray two 9-inch or three 8-inch cake pans with nonstick spray.

Step 3 –In a large mixing bowl, add the oil, the eggs, the whole milk, 2 tablespoons of the lime zest, and 1 tablespoon of the lime juice and cream it together with an electric mixer for 2 minutes.

Step 4 –In a large bowl, add the sugar, the flour, the baking powder, the baking soda, and the salt and mix to combine.

Step 5 –Stir the dry ingredients into the creamed mixture and fold until just combined.

Step 6 –Add the batter to the prepared baking pans.

Step 7 –Bake the cakes until a toothpick inserted into the center of the cakes comes out clean, about 20-26 minutes if using 8-inch pans and 30-36 minutes if using 9-inch pans.

Step 8 –Allow the cakes to cool.

Step 9 –In a large bowl, cream together the butter and the cream cheese, scraping the sides of the bowl often, until it is light and fluffy, about 4-5 minutes.

Step 10 –Add the powdered sugar, the remaining lime juice, and the remaining lime zest to the butter mixture and cream the frosting together.

Step 11 –Chill the frosting in the fridge for 30 minutes-1 hour.

Step 12 –Spread the cooled frosting on top of one of the cooled cake layers.

Step 13 –Place the remaining cake layer on top of the frosted cake and spread the frosting all over the top and sides of the cake.

Step 14 –Garnish the cake with the lime slices.

Step 15 –Serve.
