Layered Mashed Potatoes just couldn’t decide between mashed potatoes and mashed sweet potatoes… so it picked both! It layers creamy traditional potato mash and sweet potato, with plenty of tang and herb flavors in each stripe of fluffy flavor. Layered Mashed Potatoes are as beautiful to look at as they are to eat, and that is saying something! Mmmm, this will really shake up your dinner table!
Ingredients
- 3 1/4 pounds baking potatoes, peeled, chopped, and boiled
- 1 large sweet potato, peeled, chopped, and boiled
- 1 (8-ounce) tub chive and onion cream cheese spread
- 1/2 cup sour cream
- 1/4 teaspoon black pepper
- 1/4 cup parmesan cheese, shredded and divided
- 1/4 cup cheddar cheese, shredded and divided
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Grease a 2-quart casserole dish.
Step 3 –Place the baking potatoes and the sweet potatoes into separate bowls.
Step 4 –Into each bowl, add 1/2 of the cream cheese spread, 1/2 of the sour cream, and 1/2 of the pepper and mash until creamy.
Step 5 –Stir 1/2 of the parmesan into the baking potatoes mash.
Step 6 –Stir 1/2 of the cheddar into the sweet potato mash.
Step 7 –Layer 1/2 of the sweet potatoes and then 1/2 of the potatoes into the prepared baking dish (you may choose to reverse the layers).
Step 8 –Repeat the layers.
Step 9 –Bake for 15 minutes.
Step 10 –Top the potatoes with the remaining parmesan and the remaining cheddar.
Step 11 –Bake until the cheese is melted, about 5 minutes.
Step 12 –Serve.
