Lazy Day Beef Roast

This one is easy, but oh so delicious! Kick back and make Lazy Day Beef Roast today! A rump roast gets a tan in the pan, then it’s off to the oven to be sprinkled with a dry onion mix along with a showering of beef stock. It takes its time in the oven, but it’s worth it for that fork-tender goodness that is to come. Yum! Laid back and ready to relax, Lazy Day Beef Roast will put your mind at ease about what’s for dinner. Don’t ya just love a lazy day?!

Ingredients

  • 1 (3-pound) rump roast
  • kosher salt, to taste
  • 2 tablespoons butter
  • 1 (2-ounce) package dry onion soup mix
  • 1 cup beef broth or stock
  • fresh parsley, to taste, chopped, for garnish

Directions

Step 1 –Transfer the rump roast to a large plate and let it rest until it reaches room temperature, about 30-40 minutes.

Step 2 –Preheat the oven to 300 degrees F.

Step 3 –Trim any of the excess fat from the roast and generously rub all sides with the salt.

Step 4 –In a heavy roasting pan or a Dutch oven over medium-high heat, melt the butter.

Step 5 –Add the roast to the melted butter and sear on all sides until browned, about 1 minute per side.

Step 6 –Sprinkle the onion soup mix over the top of the seared roast, then pour in the beef broth.

Step 7 –Cover and bake the roast until it is fall-apart tender and reaches an internal temperature of 145 degrees F, about 3 hours.

Step 8 –While still covered, transfer the pan to a wire rack and let the roast rest, about 10-15 minutes.

Step 9 –Slice and serve the roast, garnished with the parsley.
