Leftover Ham Salad

The real challenge of leftovers is making them compelling. We all know we could just microwave the leftover ham that’s in the fridge, but that doesn’t feel exciting for a lunchtime dish. Thankfully, making leftovers amazing is what this Leftover Ham Salad aims to do (and succeeds in)! The savory ham forms the backbone on which the flavors build, and those flavors are just plain fun! Sour and tangy pickles, crunchy, refreshing celery and red onion, and mayo and mustard to bring the whole thing together. You can eat Leftover Ham Salad on its own or as a sandwich… whatever suits your fancy!

Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons whole-grain mustard
  • 1 pound leftover baked ham, cut into 1-inch chunks
  • 1 1/4 cups bread-and-butter pickle chips, drained with 1 tablespoon of the juices reserved
  • 2 inner ribs celery, finely chopped, plus 2 tablespoons leaves from the inner ribs, coarsely chopped
  • 1/2 small red onion, finely chopped
  • bread slices, to taste

Directions

Step 1 –In a large bowl, whisk the mayonnaise and the mustard together.

Step 2 –In the bowl of a food processor, add the ham and the pickles and pulse until they are finely chopped, but not puréed.

Step 3 –Add the ham mixture, the pickle juice, the celery, the celery leaves, and the onions to the mayonnaise mixture and stir to combine.

Step 4 –Serve the ham salad as a sandwich on the bread slices.
