Ingredients
- 2 large Golden Delicious apples or Braeburn apples, peeled, cored, and diced
- 1 tablespoon plus 2 tablespoons blonde coconut sugar, divided
- sea salt, to taste
- 1/4 teaspoon cinnamon
- 2/3 cup fat-free cream cheese, softened
- 1/3 cup Greek yogurt, plain and fat-free
- 4 dates, no sugar added
- 1/2 cup walnut halves
Directions
Step 1 –Add the diced apples, 1 teaspoon of the coconut sugar, the salt, and the cinnamon to a medium pot.
Step 2 –Cover the pot and cook the apple mixture on medium just until it starts to boil.
Step 3 –Reduce the heat to a simmer and cook until tender, about 30 minutes. The mixture should not resemble applesauce.
Step 4 –Allow the apple mixture to cool to room temperature.
Step 5 –In a medium mixing bowl, add the cream cheese, the yogurt, and the remaining coconut sugar and beat with an electric mixer until the mixture is smooth and the sugar has dissolved, about 2 minutes.
Step 6 –Refrigerate the cream mixture until ready to use.
Step 7 –Add the dates to a food processor and pulse until they are finely diced.
Step 8 –Add the walnuts to the dates and continue to pulse until it forms a coarse crumb consistency and is combined with dates.
Step 9 –Amongst 8 individual dessert dishes, evenly layer the walnut mixture, the cream cheese mixture, and the cooked apple.
Step 10 –Sprinkle any remaining walnut mixture over the top of the dessert dishes.
Step 11 –Serve chilled.
