Lighter Mac and Cheese

Ingredients

  • 3 cups low-sodium vegetable or chicken broth
  • 1 cup whole milk
  • 2 tablespoons salted butter
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon mustard
  • 3/4 teaspoon salt
  • ground black pepper, to taste
  • 3 cups whole-wheat elbow macaroni, uncooked
  • 1 cup marble or cheddar cheese, shredded
  • 1/4 cup parmesan cheese, shredded

Directions

Step 1 –In a medium pot over medium heat, add the broth, the milk, the butter, the garlic powder, the mustard, the salt, and the ground black pepper and bring to a boil.

Step 2 –Add the macaroni to the broth mixture and cook, stirring every few minutes, until al dente, about 8-10 minutes.

Step 3 –Turn the stovetop heat off and add the marble cheese and the parmesan cheese in portions, stirring in between each addition, until melted.

Step 4 –Serve immediately.
