Loaded Brunch Potato

Loaded Brunch Potato makes use of the humble, but delicious, sweet potato instead of the more traditional white potato. Ingredients

  • 1 medium sweet potato
  • 2 tablespoons whole-milk vanilla yogurt
  • 1/4 cup blueberries
  • 2 tablespoons granola, homemade or store-bought

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Wash the sweet potato and prick it with a fork to allow steam to escape.

Step 3 –Place the potato on a baking sheet and bake until it is soft and can be pierced easily with a fork, about 45 minutes.

Step 4 –Open the sweet potato using a knife and then add the yogurt, the blueberries, and the granola.

Step 5 –Serve.
