Ingredients

  • 1 pound ground beef
  • 1 medium green pepper, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (10-ounce) can diced tomatoes with green chilies, undrained
  • 1 (8-ounce) can tomato sauce
  • 1/2 cup long grain rice, uncooked
  • 1 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • hot pepper sauce, to taste
  • 1 small head cabbage, shredded
  • 1 cup colby cheese, shredded
  • fresh basil, optional, to taste, chopped, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large skillet over medium heat, add the beef, the green pepper, the onion, and the garlic and cook, while crumbling the meat, until the beef is no longer pink.

Step 3 –Drain the excess fat from the skillet.

Step 4 –Add the tomatoes with chilies, the tomato sauce, the rice, the salt, the dried basil, the oregano, the white pepper, the black pepper, the cayenne pepper, and the hot sauce to the beef mixture and stir to combine.

Step 5 –Spread the beef mixture into a 9×13-inch baking dish.

Step 6 –Sprinkle the cabbage and the cheese over the top of the beef mixture.

Step 7 –Cover the casserole and bake until the rice is tender, about 1 hour 5 minutes-1 hour 15 minutes.

Step 8 –Serve garnished with the fresh basil.
