Ingredients

For the bake:

  • 6 large eggs
  • 1 cup half-and-half
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 8 small croissants or baked crescent rolls, cut into 1-inch pieces
  • 2 cups cheddar cheese, shredded and divided
  • 1 tablespoon unsalted butter
  • 1 cup white button or cremini mushrooms, sliced
  • 1/2 medium bell pepper, diced
  • 1 small sweet potato, peeled and diced
  • 8 ounces ground beef
  • 1 1/2 teaspoons taco seasoning
  • 1 cup baby spinach

Optional toppings:

  • salsa, to taste
  • hot sauce, to taste
  • sour cream, to taste
  • fresh cilantro, to taste, chopped

Directions

Step 1 –Arrange an oven rack in the middle position.

Step 2 –Preheat the oven to 375 degrees F.

Step 3 –Coat an 8-inch square dish with cooking spray.

Step 4 –Place the eggs and the half-and-half in a large bowl and season with the salt and the pepper and whisk until the mixture is fluffy.

Step 5 –Add the croissant pieces and 1 1/2 cups of the cheddar to the egg mixture and stir to combine.

Step 6 –Melt the butter in a large skillet over medium-high heat.

Step 7 –Add the mushrooms, the bell pepper, and the sweet potato to the melted butter and cook, stirring occasionally, until they are softened, about 5 minutes.

Step 8 –Add the beef and the taco seasoning to the veggies and cook, uncovered, while breaking the meat into smaller pieces, until the beef is cooked through and the sweet potatoes are tender, about 5-7 minutes. Drain the fat from the pan.

Step 9 –Add the spinach to the meat mixture and cook until it is wilted, about 1 minute.

Step 10 –Transfer the pan from the heat and allow the mixture to cool slightly.

Step 11 –Add the meat mixture to the egg mixture and stir until it is well combined.

Step 12 –Transfer the mixture to the prepared baking dish and sprinkle with the remaining cheese.

Step 13 –Cover the baking dish tightly with aluminum foil and bake for 25 minutes.

Step 14 –Uncover the dish and bake until the eggs are set, about 15-20 minutes.

Step 16 –Serve with the salsa, the hot sauce, the sour cream, and the cilantro.
