Ingredients
For the beef mixture:
- 1 1/2 pounds lean ground beef
- 2 cups eggplant, peeled and finely chopped
- 1/2 cup onion, chopped
- 1 large egg
- 1/2 cup milk
- 1/4 cup quick-cooking oats
- 1 1/2 teaspoons salt
- 1/2 teaspoon basil
For the tomato sauce:
- 1 (16-ounce) can stewed tomatoes
- 1 clove garlic, minced
- 1 tablespoon cornstarch
- 3/4 teaspoon salt
- parsley leaves, to taste, for garnish

Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –In a bowl, add the beef, the eggplant, the onion, the egg, the milk, the oats, 1 1/2 teaspoons of the salt, and the basil and mix to combine.
Step 3 –Spread the beef mixture into an ungreased 8×8-inch baking pan.
Step 4 –Bake the beef mixture, uncovered, until it reaches an internal temperature of 160 degrees F, about 45-50 minutes.
Step 5 –Drain off the excess fat from the meat mixture.
Step 6 –In a small saucepan, add the tomatoes and their juices, the garlic, the cornstarch, and the remaining salt and stir to combine.
Step 7 –Cook the sauce mixture, stirring constantly, until it thickens and comes to a boil.
Step 8 –Let the sauce mixture boil, stirring constantly, for 1 minute.
Step 9 –Cut the meat mixture into squares and top with the tomato sauce.
Step 10 –Serve the meatloaf garnished with the parsley.
