We have your easy, cheesy, and famously delicious weeknight meal right here. Mexican Chicken Lasagna combines one of the great Italian comfort foods with the deep flavors of Tex-Mex cuisine. Layers of savory refried beans, sharp and creamy cheese, and juicy and fatty chicken thighs sandwich in between hearty tortillas and bright salsa. It only takes 30 minutes to whip up a Mexican Chicken Lasagna, so there’s no reason not to enjoy this meal!
Ingredients
- 4 cups salsa roja, divided
- 12 corn tortillas, divided
- 1 1/2 cups refried beans
- 1 1/2 cups corn kernels
- 2 1/2 cups Mexican-style cheese blend, shredded and divided
- 3 cups chicken thighs, grilled, boneless, skinless, and chopped
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Spray a 9×13-inch casserole dish with non-stick cooking spray.
Step 3 –Cover the bottom of the prepared casserole dish with 1/2 cup of the salsa and cover with a layer of 4 of the tortillas. Tear the tortillas into smaller pieces to cover up any empty spots.
Step 4 –Spread 1/2 of the refried beans over the tortillas.
Step 5 –Spread the corn, 1 cup of the salsa, and 1 cup of the cheese over the beans.
Step 6 –Add another layer of 4 of the tortillas.
Step 7 –Layer with the remaining refried beans, the chicken, 1 cup of the salsa, and 1 cup of the cheese.
Step 8 –Finish with a final layer of the remaining tortillas and cover with the remaining salsa and top with the remaining cheese.
Step 9 –Bake until the dish is cooked through and the cheese is melted and bubbly, about 20-25 minutes.
Step 10 –Serve warm and enjoy!
