Mom’s Healthy Baked Salmon

Ingredients

  • 4 (6-ounce) salmon fillets
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper
  • 2 tablespoons olive oil
  • 2 teaspoons garlic, minced
  • 1 teaspoon Italian herb seasoning
  • 1 medium lemon, halved
  • thyme or parsley, optional, to taste, chopped, for garnish

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Grease a large baking pan.

Step 3 –Arrange the salmon fillets on the baking sheet.

Step 4 –Season the salmon with the salt and the pepper.

Step 5 –Juice 1/2 of the lemon; mix the lemon juice with the olive oil, the minced garlic, and the Italian herb seasoning, stirring until well-combined.

Step 6 –Spoon the olive oil mixture over the salmon, rubbing it all over the tops and the sides.

Step 7 –Thinly slice the remaining 1/2 of the lemon, then top each piece of salmon with a lemon slice.

Step 8 –Bake until the salmon is opaque and flaky when pulled apart with a fork, about 12-15 minutes.

Step 9 –Garnish with the thyme and serve.
