For the cake:

  • 2 cups tart apples, peeled and shredded
  • 2 cups pears, peeled and shredded
  • 2 cups sugar
  • 1 1/4 cups canola oil
  • 1 cup raisins
  • 1 cup pecans, chopped
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

For the cream cheese frosting:

  • 3 ounces cream cheese, softened
  • 3 cups confectioners’ sugar
  • 1/4 cup butter, softened
  • 2 tablespoons 2% milk
  • 1/2 teaspoon vanilla extract

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Grease a 9×13-inch baking pan.

Step 3 –In a large bowl, combine the apples, the pears, the sugar, the canola oil, the raisins, the pecans, the eggs, and 1 teaspoon of the vanilla extract.

Step 4 –In a separate bowl, combine the flour, the baking soda, the cinnamon, the nutmeg, and the salt.

Step 5 –Stir the dry ingredient mixture into the wet ingredient mixture.

Step 6 –Pour the batter into the prepared baking pan.

Step 7 –Bake until a toothpick inserted into the center comes out clean, about 45 minutes-1 hour.

Step 8 –Let the cake cool completely on a wire rack.

Step 9 –In a large bowl, beat the cream cheese, the confectioners’ sugar, and the butter together until smooth.
