Ingredients

  • 1/2 cup unsalted butter
  • 4 tablespoons unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/8 teaspoon salt
  • 3 cups quick-cooking oats
  • 1/2 cup peanut butter, crunchy
  • 1 teaspoon vanilla extract
  • flaky sea salt, optional, for finishing

Directions

Step 1 –Line a baking sheet with parchment paper.

Step 2 –In a medium saucepan, over medium heat, combine the butter, cocoa powder, sugar, milk, and salt.

Step 3 –Bring the mixture to a boil over medium heat, stirring occasionally, and cook for about 1 minute.

Step 4 –Remove the mixture from the heat.

Step 5 –Stir in the oatmeal, peanut butter, and vanilla until combined. The mixture should begin to thicken.

Step 6 –Using a spoon or ice-cream scoop, drop about 1-2 tablespoons of the mixture at a time on the prepared baking sheet, flattening them slightly.

Step 7 –Sprinkle each cookie with sea salt and allow them to cool until hardened completely, about 1 hour.
