Ingredients

  • 1/2 cup almond flour
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground pepper
  • 1 large egg
  • 2 tablespoons water or milk
  • 1 cup almonds, toasted and finely chopped
  • 2 teaspoons Italian seasoning, optional
  • 1/2 cup parmesan, optional, finely grated
  • 1 pound chicken tenders

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Line a baking sheet with parchment paper and place a baking rack in it.

Step 3 –In a shallow dish, combine the almond flour, salt, paprika, and pepper.

Step 4 –In a second shallow dish, whisk together the eggs and water to create an egg wash.

Step 5 –In a third shallow dish, combine the almonds, Italian seasoning, and parmesan cheese.

Step 6 –Pat the chicken tenders dry.

Step 7 –Coat each chicken tender, one at a time, in the almond flour mixture, then in the egg wash mixture, then in the chopped almond mixture.

Step 8 –Transfer the coated chicken tenders to the prepared baking rack.

Step 9 –Bake until the chicken tenders are cooked to an internal temperature of 160 degrees F, about 15 minutes.

Step 10 –Remove the tenders from the oven and immediately cover them with foil. The chicken should come up to a safe eating temperature of 165 degrees F.
