Old World Country Casserole

It’s always kind of interesting to think about how things used to be. Like even thinking back 20 years, the way we did things was quite different than they are now. We often think about this when we eat Old World Country Casserole. The tender noodles soaked in a creamy, cheesy tomato sauce really makes us ponder about how far we’ve come. It’s also just such a tasty dish, we love any excuse to make it again and again. If you’re feeling a little nostalgic, or wanting to take some time to appreciate all the things you have, this Old World Country Casserole is the way to go!

Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 1 teaspoon salt, plus more, to taste
  • 1/2 teaspoon black pepper, plus more, to taste
  • 1 (8-ounce) package egg noodles, uncooked
  • 1 (14.5-ounce) can petite diced tomatoes
  • 1 (10.75-ounce) can condensed tomato soup, undiluted
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 2 teaspoons Worcestershire sauce
  • 1 cup cheddar cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Add the ground beef, the onion, and the bell pepper in a large skillet over medium heat and cook, while crumbling the meat, until the beef has browned and the veggies are tender, about 10-15 minutes.

Step 3 –While cooking, season the beef mixture with 1 teaspoon of the salt and 1/2 teaspoon of the pepper.

Step 4 –Fill a 5-quart Dutch oven or other oven-safe pot with lightly salted water and bring to a rapid boil. Add the egg noodles, and cook until they are tender yet firm to the bite, about 7-9 minutes.

Step 5 –Drain the noodles and return to the pot.

Step 6 –Add the diced tomatoes, the tomato soup, the cottage cheese, the sour cream, and the Worcestershire sauce to the egg noodles and stir to blend.

Step 7 –Stir the noodle mixture into the ground beef mixture until it is evenly combined.

Step 8 –Taste the casserole and adjust the salt and the pepper seasonings as needed.

Step 9 –Sprinkle the cheddar cheese over the top of the casserole and bake, uncovered, until it is heated through and the cheese has melted and is golden, about 25-30 minutes.

Step 10 –Serve immediately.
