One-Pan Teriyaki Beef and Rice

  • 4 green shallots
  • 1 tablespoon vegetable oil
  • 1 pound beef mince
  • 1/2 cup teriyaki marinade
  • 2 teaspoons cornflour
  • 1 (1 pound) packet frozen stir-fry vegetable mix
  • 1 (1 pound) packet microwave long-grain rice

Directions

Step 1 –Finely chop 2 shallots and slice the remaining into long thin strips.

Step 2 –Place the long thin strips in a bowl of iced water to curl until needed.

Step 3 –Heat the vegetable oil in a large deep frying pan or wok over high heat.

Step 4 –Add the beef and cook, using a wooden spoon to break up any lumps, for 5 minutes.

Step 5 –Combine the teriyaki marinade and cornflour in a small bowl until smooth.

Step 6 –Add the teriyaki mixture to the beef and stir to combine.

Step 7 –Add the vegetables, cover, and cook, stirring occasionally, until the vegetables are heated through, about 5 minutes.

Step 8 –Warm the rice following the packet directions.

Step 9 –Add the chopped shallots to the rice and toss to combine.

Step 10 –Drain the curled shallot.

Step 11 –Divide the rice mixture among serving bowls and spoon over with the teriyaki beef.

Step 12 –Garnish with the shallot curls and serve!
