Polish Pasta Bake

It’s cheesy, loaded with a few veggies, and a little bit creamy… Polish Pasta Bake really is the whole package! So, get ready to experience a whole new world of flavors!

Ingredients

  • 4 cups short pasta, such as radiatori or rotini
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 1/2 cups milk
  • 1 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1 (16-ounce) jar sauerkraut, rinsed and well-drained
  • 1 1/2 pounds smoked Polish sausage or kielbasa, sliced into 1/2-inch-thick pieces
  • 4 green onions, chopped, plus more, to taste, for garnish
  • 3 cups Swiss cheese, grated, divided

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 9×13-inch baking dish with nonstick cooking spray.

Step 3 –Bring a large pot of salted water to a boil and cook the pasta to al dente, according to the package directions.

Step 4 –Drain the pasta, then add it to a large bowl.

Step 5 –In a large saucepan, melt the butter over medium heat.

Step 6 –Whisk the flour into the butter and cook for 1 minute, stirring constantly.

Step 7 –Gradually add the milk into the flour mixture, while whisking constantly, and cook until it is thickened.

Step 8 –Transfer the sauce mixture from the heat.

Step 9 –Add the sour cream, the Dijon mustard, the garlic powder, the salt, and the pepper to the sauce mixture and stir to combine.

Step 10 –Pour the sauce over the pasta and toss to coat.

Step 11 –Add the sauerkraut, the sausage, 4 of the green onions, and 2 cups of the cheese to the pasta mixture and stir to combine.

Step 12 –Pour the pasta mixture into the prepared baking dish, then sprinkle with the remaining cheese.

Step 13 –Bake the pasta until golden-brown and bubbly, about 30-40 minutes.

Step 14 –Allow the pasta bake to rest for 5 minutes.

Step 15 –Serve the pasta bake garnished with the extra green onions.
