When time and money are tight, or you are just wanting a filling meal fast, take stock in this rags-to-riches-flavor-loaded dish! Simple and plentiful, Poor Man’s Burrito Bowl is packed with great taste from a lot of great resources. From an economical and meal-satisfaction standpoint, some fluffy rice is topped with an abundance of flavorful black beans, a profusion of spicy salsa, unlimited cheddar cheese, and even some green onions and jalapeños to liven up the fortune 500-worthy taste party. This valuable bowl of deliciousness is worth its weight in hunger-curbing gold. Poor Man’s Burrito Bowl is so easy, so wallet-friendly, and full of so many great assets, you will be free to invest more of your time and money on the other wonderful things that you love.

Ingredients

  • 2 cups long grain white rice
  • 1/2 teaspoon salt
  • 3 cups water
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1 (16-ounce) jar salsa
  • 6 ounces cheddar cheese, shredded
  • 1 bunch green onions, sliced, for serving
  • 1 jalapeño, optional, sliced, for serving

Directions

Step 1 –In a medium saucepan over high heat, add the rice, the salt, and the water.

Step 2 –Cover the saucepan and bring the water to a full boil.

Step 3 –Reduce the heat to low and let the rice simmer until the liquid is totally absorbed, about 15 minutes.

Step 4 –Turn off the heat and leave the saucepan on the stovetop, covered, to let the rice rest, about 5 minutes.

Step 5 –In a separate medium saucepan over medium heat, add the black beans, the cumin, and the garlic powder and cook, while stirring often, until heated through, about 5 minutes.

Step 6 –Fluff the rice.

Step 7 –In a bowl, add about 1 cup of the cooked rice, about 1/2 cup of the warm seasoned black beans, about 1/3 cup of the salsa, and about 1/4 cup of the cheddar cheese.

Step 8 –Repeat with the other serving bowls and the remaining ingredients.

Step 9 –Top the burrito bowls with the green onions and the jalapeños and serve.
