Potluck Cheesecake

Who doesn’t love a good potluck? There’s nothing better than a buffet of all the best things ever, and then getting to load your plate up with them, right?! That’s how we feel. The hardest part is deciding what to bring when you’re invited to one, but we’ve got you covered with Potluck Cheesecake. You can’t forget dessert, and this is a super easy one at that. It’s also sweet, creamy, crunchy, and just plain dreamy. Everyone will take a square or two and it’ll be the most delicious finishing touch to their plates they didn’t know they were missing! Be the potluck champion with this Potluck Cheesecake!

Ingredients

For the crust:

  • 1 (11-ounce) box vanilla wafers, crushed
  • 1/2 cup butter, melted
  • 1/2 teaspoon salt

For the filling:

  • 1 (8-ounce) package cream cheese, room temperature
  • 1/2 cup butter, room temperature
  • 2 cups powdered sugar
  • 1 (20-ounce) can crushed pineapple, well-drained
  • 1 (8-ounce) tub whipped topping, thawed

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a 9×9-inch baking pan with foil.

Step 3 –In a medium bowl, add the crushed wafers, 1/2 cup of the melted butter, and the salt and stir to combine.

Step 4 –Evenly press enough of the crust mixture to cover the bottom of the prepared pan. Reserve the remaining crust mixture for garnish.

Step 5 –Bake the crust until it is lightly golden, about 5-7 minutes.

Step 6 –Let the crust cool completely.

Step 7 –While the crust is cooling, in the bowl of a stand mixer fitted with the paddle attachment, add the cream cheese and the remaining butter and beat on medium speed until it is smooth.

Step 8 –Add the powdered sugar to the cream cheese mixture and beat until it is incorporated with no lumps.

Step 9 –Reduce the mixer’s speed to low and carefully add the pineapple to the cream cheese mixture. Beat until well-combined.

Step 10 –Fold the whipped topping into the filling mixture.

Step 11 –Spread the filling onto the cooled crust.

Step 12 –Let the cheesecake chill in the refrigerator for at least 3 hours and up to overnight.

Step 13 –Cut the cheesecake into squares.

Step 14 –Serve the cheesecake squares garnished with the reserved crust mixture.
