Pure-Comfort Casserole

Golden caramelized onions and juicy, savory shredded chicken, mixed with tender pasta in a rich and creamy sauce will have lips smacking and forks scraping to get at every last morsel on your plate. Ingredients

  • 8 ounces medium pasta shells
  • 3 tablespoons unsalted butter
  • 2 large sweet onions, sliced
  • 2 tablespoons all-purpose flour
  • 3 cloves garlic, minced
  • 1/3 cup dry white wine
  • 2 1/2 cups chicken stock
  • 3 cups rotisserie chicken, shredded
  • 3/4 cup sour cream
  • 1/4 cup fresh chives, chopped, divided
  • 2 tablespoons fresh parsley leaves, chopped
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 4 cups salt and pepper kettle chips, lightly crushed

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large pot of salted, boiling water, cook the pasta according to the package directions.

Step 3 –Drain the pasta well.

Step 4 –In a large, ovenproof skillet over medium-high heat, melt the butter.

Step 5 –Add the onions and cook, stirring often, until they are golden-brown and caramelized, about 20 minutes.

Step 6 –Add the flour and the garlic to the onions and cook, while whisking, until the flour is lightly browned, about 1 minute.

Step 7 –Add the wine and cook, while scraping the bottom to release the browned bits.

Step 8 –Add the chicken stock and stir to combine.

Step 9 –Bring the sauce mixture to a boil and then reduce the heat to low.

Step 10 –Simmer the sauce mixture, stirring occasionally, until reduced and slightly thickened, about 3-4 minutes.

Step 11 –Stir in the cooked pasta, the chicken, the sour cream, 3 tablespoons of the chives, and the parsley.

Step 12 –Season the chicken mixture with the salt and the pepper.

Step 13 –Top the chicken mixture with the potato chips.

Step 14 –Bake the casserole until it is golden-brown and bubbly, about 20 minutes.

Step 15 –Serve garnished with the remaining chives.
