Quick Ranch Mash

The Quick Ranch Mash shows off what the humble pressure cooker can do! It makes boiling and softening the potatoes a very hurried affair. Then, it’s just a matter of adding in the butter, the cream cheese, and the ranch seasoning to make rich, creamy, tangy, and zesty mashed potatoes guaranteed to make everyone happy. This Quick Ranch Mash is a side dish so delicious you may not have room for the main course!

Ingredients

  • 2 1/2 pounds russet potatoes, peeled and cut into 2-inch chunks
  • 3/4 cup water
  • kosher salt, to taste
  • 1 stick salted butter, softened
  • 4 ounces cream cheese, softened
  • 2 tablespoons whole milk, plus more, to taste
  • 1 teaspoon powdered ranch dressing mix, plus more, to taste
  • freshly ground black pepper, to taste
  • 1 tablespoon fresh chives, finely chopped

Directions

Step 1 -In a pressure cooker, add the potatoes, the water, and the salt.

Step 2 -Lock the lid and set the lever to seal.

Step 3 -Press “manual” on the pressure cooker and set the timer to 10 minutes.

Step 4 -When the pressure cooker timer is up, manually and carefully release the steam.

Step 5 -Remove the lid and set the pot to “keep warm.”

Step 6 -Lightly mash the potatoes.

Step 7 -Add the butter, the cream cheese, 2 tablespoons of the milk, and 1 teaspoon of the ranch powder and mash again until the potatoes are smooth.

Step 8 -Taste the mashed potatoes and add the salt, the pepper, the extra milk, and the extra ranch, as needed.

Step 9 -Garnish with the chives and serve hot.
