Ingredients

  • 1 1/2 cups rice, cooked
  • 2 cups milk, divided
  • 1/4 teaspoon salt
  • 2/3 cup golden raisins, optional
  • 1 egg, beaten
  • 1/3 cup white sugar
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • cinnamon, optional, to taste, for sprinkling on top

Directions

Step 1 –In a saucepan over medium heat, stir the cooked rice, 1 1/2 cups of the milk, and the salt together. C

Step 2 –Continue to stir and cook until the contents become creamy and thickened, about 15-20 minutes.

Step 3 –Stir in remaining milk, raisins, beaten egg, and sugar.

Step 4 –Continue to stir and cook until the egg has set, 2-3 minutes.

Step 5 –Remove the saucepan from the heat.

Step 6 –Stir the butter and vanilla into the pudding.

Step 7 –Serve in bowls and sprinkle the cinnamon on top.
