Ingredients

For the salsa:

  • 8 ounces (about 10 small) tomatillos, husks discarded
  • 1 jalapeño, halved and seeded
  • 1 tablespoon olive oil
  • 2 cups fresh cilantro
  • 2 tablespoons lime juice
  • 1/4 teaspoon kosher salt, plus more, to taste

For the tacos:

  • 8 small corn tortillas
  • 6 ounces (about 2 cups) sharp cheddar cheese, coarsely grated
  • 8 large eggs
  • bacon, to taste, cooked and crumbled, for topping
  • radishes, sliced, to taste, for topping

Directions

Step 1 –In the oven, arrange one rack 6-inches from the broiler and another rack below the first rack, about 12-inches from the broiler.

Step 2 –Preheat the broiler on high heat.

Step 3 –On a large rimmed baking sheet, add the tomatillos, the jalapeño, the olive oil, and the salt to taste, and toss to combine. Place on the top rack and broil until tender and charred in spots, about 8-10 minutes.

Step 4 –Transfer the broiled tomatillo mixture to a blender. Set it aside.

Step 5 –On a second rimmed baking sheet, add the tortillas and top each tortilla with 1/4 cup of the sharp cheddar cheese, making a small well in the center of the cheese to prevent any egg from spilling off of the tortilla.

Step 6 –Add an egg to the well of each of the tortillas and broil on the middle rack until the egg yolks are runny, about 4-6 minutes.

Step 7 –In the blender, add the cilantro, the lime juice, and 1/4 teaspoon of the salt to tomatillo mixture and purée until smooth; transfer the salsa to a medium-sized serving bowl.

Step 8 –Plate the tacos, top with the salsa, the bacon, and the sliced radishes, and serve.
