A bed of fresh, crunchy arugula tossed with some toasted, salty walnuts, sweet, juicy pears, and creamy crumbles of blue cheese that will have a tasty magnetic field pulling you to it. The tangy, sweet dressing drizzled on top is what really deems this salad out of this world! For the salad:

  • 3/4 cup walnuts
  • 6 cups arugula
  • 1 ripe pear, cored and thinly sliced

For the dressing:

  • 3 1/2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons olive oil

For the topping:

  • 1/2 cup blue cheese, crumbled


Step 1 –Toast the walnuts by tossing them in a dry deep pan over medium heat, about 1-2 minutes.

Step 2 –Allow the walnuts to cool, for about 5-10 minutes.

Step 3 –Roughly chop the walnuts.

Step 4 –In a large bowl, add the arugula, pear, and toasted and chopped walnuts.

Step 5 –In a small bowl, whisk together the vinegar, honey, salt, pepper, and olive oil.

Step 6 –Drizzle the dressing over the salad and crumble with the cheese.

Step 7 –Serve.
