For the cake:

  • 1 box white cake mix, plus the ingredients on the box
  • 1 (3-ounce) package lime gelatin mix
  • 1 lime, juiced

For the icing:

  • 1/4 cup butter, softened
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime juice, plus more to taste and divided
  • lime zest, to taste
  • 1-2 tablespoons milk


Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease an 11×16-inch baking dish.

Step 3 –In a medium bowl, add the white cake mix and the gelatin mix and stir to combine.

Step 4 –Add the ingredients the cake mix calls for and 1 tablespoon of the lime juice to the gelatin mixture and beat until well combined.

Step 5 –Pour the batter in the prepared baking dish.

Step 6 –Bake the batter until a toothpick inserted in the center comes out clean, about 20-22 minutes.

Step 7 –Let the cake cool.

Step 8 –While the cake cools, cream the butter and the cream cheese.

Step 9 –Add the powdered sugar, the vanilla, the remaining lime juice to taste, the lime zest, and the milk to the butter mixture and beat until smooth.

Step 10 –Taste the frosting and add more of the lime juice if you prefer a stronger citrus flavor.

Step 11 –Frost the cooled cake and slice.

Step 12 –Serve.
