They’re tender, sweet, and full of flavor. The queen of country pop knew what she was doing when she deemed this garden combo one of her favorite dishes, proving it did, in fact, impress her much. Serve it as your main or even alongside your favorite protein, but no matter how you do, it’s sure to be a breathtakin’, earthquakin’ kind of time! Man! Ingredients
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 4 medium zucchinis, chopped
- 2 large tomatoes, finely chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
Directions
Step 1 –In a large skillet over medium-high heat, heat the oil.
Step 2 –Add the onion to the oil and cook, while stirring, until tender, about 2-4 minutes.
Step 3 –Add the zucchinis to the onion and cook, while stirring, for 3 minutes.
Step 4 –Stir the tomatoes, the salt, and the pepper into the zucchini mixture and cook, while stirring, until the veggies are tender, about 4-6 minutes.
Step 5 –Serve using a slotted spoon.
