Sheet-Pan Maple Sausage and Veggies

Ingredients

  • 16 ounces sweet potatoes, peeled and diced into 3/4-inch cubes
  • 16 ounces Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • salt, to taste
  • freshly ground black pepper, to taste
  • 1/3 cup maple syrup or honey
  • 1/3 cup Dijon mustard
  • 12 ounces smoked turkey sausage, sliced into 1/3-inch-thick slices
  • 1/2 medium red onion, roughly sliced
  • 1 tablespoon garlic, minced
  • 1 tablespoon parsley, chopped, for garnish
  • 1 tablespoon parmesan shavings, optional, for serving

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Lightly coat a large sheet pan with cooking spray.

Step 3 –Spread the sweet potatoes and the Brussels sprouts, cut-side down, evenly on the prepared sheet pan.

Step 4 –Drizzle the veggies with the olive oil and sprinkle with the salt and the pepper.

Step 5 –Roast the veggies for 15 minutes.

Step 6 –While the veggies are roasting, in a mason jar, combine the maple syrup and the mustard and shake well.

Step 7 –Transfer the sheet pan from the oven and carefully add the sausage, the red onion, and the garlic.

Step 8 –Drizzle the meat and veggies with 1/2 of the maple syrup mixture.

Step 9 –Return the sheet pan to the oven and roast until the veggies are tender and the sausage is heated through, about 15 minutes.

Step 10 –Drizzle the sausage and veggies with the remaining maple syrup mixture and toss to coat.

Step 11 –Sprinkle the meat and veggies with the parsley and the parmesan.

Step 12 –Serve immediately.
