Simple Italian Chopped Salad

Ingredients

  • 3 cups romaine, torn into pieces
  • 1 (15-ounce) can garbanzo beans, rinsed and drained
  • 1 (6.5-ounce) jar marinated artichoke hearts, drained and chopped
  • 1 medium green pepper, chopped
  • 2 medium tomatoes, chopped
  • 1 (2.25-ounce) can sliced ripe olives, drained
  • 5 slices deli ham, chopped
  • 5 thin slices hard salami, chopped
  • 5 slices pepperoni, chopped
  • 3 slices provolone cheese, chopped
  • 2 green onions, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons parmesan cheese, grated
  • pepperoncini, to taste

Directions

Step 1 –In a large bowl, add the romaine, the garbanzo beans, the artichoke hearts, the green pepper, the tomatoes, the olives, the ham, the salami, the pepperoni, the provolone cheese, and the green onions and toss to combine.

Step 2 –In a small bowl, whisk the oil, the vinegar, the salt, and the pepper together.

Step 3 –Pour the dressing over the romaine mixture and toss to coat.

Step 4 –Sprinkle the salad with the cheese and top with the pepperoncini.

Step 5 –Serve.
