Simple Spaghetti Fra Diavolo

Ingredients

  • 1/3 cup olive oil
  • 10 cloves garlic, minced
  • 1 1/2 teaspoons crushed red pepper flakes
  • 1 (28-ounce) can crushed tomatoes with basil
  • 1 pound spaghetti
  • 1/2 cup fresh basil leaves, thinly sliced
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup fresh parsley, roughly chopped
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • parmesan, to taste, grated, for garnish

Directions

Step 1 –In a large saucepan over medium heat, heat the olive oil until it shimmers, about 1-2 minutes.

Step 2 –Add the garlic to the oil and cook, stirring frequently, until it is fragrant but not browned, about 1-2 minutes.

Step 3 –Add the crushed red pepper to the garlic and stir until it is combined.

Step 4 –Add the crushed tomatoes and their juices to the garlic mixture and stir until well-combined.

Step 5 –Increase the heat to medium-high and bring the sauce mixture to a rolling simmer.

Step 6 –Reduce the heat to medium-low and cook the sauce, stirring occasionally, about 15 minutes.

Step 7 –In a large pot of salted, boiling water, cook the spaghetti to al dente, according to the package directions. Reserve 1 1/2 cups of the pasta water and drain the rest.

Step 8 –Add the basil, the mint, the parsley, the salt, and the pepper to the sauce and stir well to combine.

Step 9 –Add the cooked spaghetti to the sauce and stir to coat.

Step 10 –Add 1 cup of the reserved pasta water to the spaghetti mixture and stir until it is absorbed. Then, stir in the remaining pasta water.

Step 11 –Reduce the heat to low and cook the spaghetti mixture, about 2 minutes. Transfer the saucepan from the heat.

Step 12 –Serve the spaghetti mixture garnished with the parmesan.
