Southwest Beef & Rice

Ingredients

  • 1 pound 90% lean ground beef
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 jalapeƱo pepper, seeded and finely chopped
  • 1 1/2 cups instant rice, uncooked
  • 1 (14.5-ounce) can diced tomatoes with mild green chiles
  • 1 1/2 cups beef broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup Mexican cheese blend, shredded

Directions

Step 1 –Heat a large skillet over medium heat.

Step 2 –Add the beef, the onion, the green pepper, and the jalapeƱo to the skillet and cook, while breaking the beef into crumbles, until the meat is no longer pink and the vegetables are tender, about 8-10 minutes.

Step 3 –Drain the liquid from the skillet.

Step 4 –Add the rice, the tomatoes, the broth, the cumin, the salt, and the pepper to the skillet and bring it to a boil.

Step 5 –Reduce the heat and simmer the beef mixture, covered, until the liquid has absorbed, about 5 minutes.

Step 6 –Fluff the rice mixture with a fork.

Step 7 –Transfer the skillet from the heat, sprinkle the top of the beef mixture with the cheese, and let it stand, covered, until the cheese has melted.

Step 8 –Serve.
