Springtime Spaghetti

Ingredients

  • 8 ounces spaghetti
  • 2 tablespoons butter
  • 1 large zucchini, julienned
  • 3 large carrots, julienned
  • 2 teaspoons garlic, minced
  • 3/4 cup heavy cream
  • 3/4 cup parmesan cheese, grated
  • 1 tablespoon fresh dill, chopped

Directions

Step 1 –Bring a large pot of salted water to a boil.

Step 2 –Cook the spaghetti according to the package directions until al dente, about 8-10 minutes.

Step 3 –Drain the pasta.

Step 4 –Melt the butter in a skillet over medium heat.

Step 5 –Sauté the zucchini, the carrots, and the garlic until tender, about 5-7 minutes.

Step 6 –Stir in the heavy cream, the parmesan, and the dill, and cook until thickened, about 5 minutes.

Step 7 –Mix in the cooked spaghetti.

Step 8 –Serve.
