What a wonderful treat! What a beautiful dessert! The summery goodness of a favorite sweet in truffle form! Strawberry Shortcake Truffles are tender bites of “cake” made from golden sandwich cookies and filled with sunny strawberry flavor, before being coated in white chocolate. These are actually a snap to make and such a delight to bite into! Strawberry Shortcake Truffles bring the summer no matter the season!
Ingredients
- 1 (15.5-ounce) package vanilla sandwich cookies, crushed
- 1 (8-ounce) block cream cheese, softened
- 1/4 cup dehydrated strawberries, crushed, plus more, to taste
- 1 teaspoon vanilla extract
- kosher salt, to taste
- 2 cups white chocolate chips
- 2 teaspoons coconut oil
Directions
Step 1 –Line a small baking sheet with parchment paper.
Step 2 –In a large bowl, add the crushed sandwich cookies, the cream cheese, 1/4 cup of the crushed dehydrated strawberries, the vanilla, and the salt and stir until the mixture is smooth.
Step 3 –Using a small cookie scoop, form the cookie mixture into small balls and place them on the prepared baking sheet, repeating until all of the mixture is used.
Step 4 –Place the baking sheet in the freezer until the balls have firmed up, about 10 minutes.
Step 5 –In a medium, microwave-safe bowl, add the white chocolate chips and the coconut oil.
Step 6 –Microwave the bowl in 30-second increments on medium heat until the chocolate and the oil are both melted, about 1 minute-1 minute 30 seconds.
Step 7 –Stir the chocolate and the coconut oil together until smooth.
Step 8 –Dip the cookie balls in the melted chocolate and return them to the baking sheet.
Step 9 –Sprinkle the still-wet chocolate coating with the extra crushed dehydrated strawberries.
Step 10 –Freeze the truffles until hardened, about 10 minutes.
Step 11 –Serve.
