Ingredients

  • salt, to taste
  • 6 ounces egg noodles
  • 2 teaspoons oil
  • 4 cloves garlic, sliced thin
  • 12 ounces fresh broccoli florets, chopped
  • 1 tablespoon butter
  • 1 medium shallot, minced
  • 3 tablespoons all-purpose flour
  • 1 3/4 cups chicken broth
  • 1 cup 1% milk
  • 12 ounces chicken breast, cooked and shredded
  • 4 ounces reduced-fat sharp cheddar, shredded
  • 3 tablespoons parmesan cheese, shredded
  • 2 tablespoons seasoned breadcrumbs

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Lightly spray a 9×13-inch casserole dish with cooking spray.

Step 3 –Bring a large pot of salted water to a boil and cook the noodles to al dente, according to the package directions.

Step 4 –While the noodles are cooking, in a large skillet, heat the oil.

Step 5 –Add the garlic to the oil and cook until golden, about 1 minute.

Step 6 –Add the broccoli and the salt to the oil, sauté, cover, and cook over medium heat until the broccoli begins to soften, about 4-5 minutes.

Step 7 –In a large pot over medium-low heat, melt the butter.

Step 8 –Add the shallots to the melted butter and cook until soft, about 2-3 minutes.

Step 9 –Add the flour and the salt to the shallots and cook for 2-3 minutes.

Step 10 –Slowly whisk the chicken broth into the shallot mixture until well combined, about 30 seconds.

Step 11 –Add the milk to the broth mixture and bring to a boil.

Step 12 –Lower the heat to medium and simmer the milk mixture, stirring occasionally, until it has thickened, about 6-7 minutes.

Step 13 –Transfer the milk mixture away from the heat and add the cheddar cheese and 1 tablespoon of the parmesan cheese. Mix well until the cheese has melted.

Step 14 –Add the chicken, the cooked noodles, and the cooked broccoli mixture to the cheese mixture and mix well until evenly coated.

Step 15 –Pour the casserole mixture into the prepared casserole dish.

Step 16 –Sprinkle the casserole with the breadcrumbs and the remaining parmesan cheese.

Step 17 –Lightly spray more of the cooking spray on top of the casserole and bake until heated through, about 20-25 minutes.

Step 18 –Place the casserole in the broiler until the breadcrumbs are browned and crisp, about 1 minute.

Step 19 –Serve.
