Red Velvet Cake Truffles

When it’s hosting time, you want to make sure people have plenty of finger foods they can enjoy without breaking the flow of conversation. It’s true of appetizers and it can also be true of desserts! Red Velvet Cake Truffles are just one example, but what an example they are! Each chocolate-coated (always a good start) sphere is filled with rich and tender red velvet cake already mixed with its beloved partner-in-crime, tangy and creamy cream cheese. These are essentially cake pops without the sticks, which is totally fine; those sticks tend to just get in the way. Red Velvet Cake Truffles are rosy desserts that you can pass around to friends and family… or, you know, just keep for yourself.

Ingredients

  • 1 (15.25-ounce) box red velvet cake mix, plus the ingredients called for on the box
  • 1 (8-ounce) package cream cheese, softened
  • 1 (12-ounce) package milk, dark, or white chocolate chips
  • 2 teaspoons vegetable oil, optional

Directions

Step 1 –Prepare the red velvet cake mix according to the package directions.

Step 2 –Let the cake cool completely.

Step 3 –Using a fork or your hands, break the cake into fine crumbs and place the crumbs into a large bowl.

Step 4 –Add the softened cream cheese to the cake crumbs and knead it gently with your hands until the cream cheese is fully incorporated.

Step 5 –Roll the cake mixture into 42 cake balls and place them on a wax-paper-lined baking sheet.

Step 6 –Place the cake balls in the refrigerator to chill.

Step 7 –Heat the chocolate in a heatproof bowl until completely melted.

Step 8 –Add the oil to the melted chocolate and stir to combine.

Step 9 –One at a time, place the cake balls into the melted chocolate and use a fork to evenly coat each ball with the chocolate.

Step 10 –Use the same fork to transfer each of the chocolate-covered truffles to the baking sheet, repeating the chocolate dipping process until all of the cake balls are coated.

Step 11 –Pour any leftover melted chocolate into a small plastic bag, cutting off one corner.

Step 12 –Pipe the remaining chocolate over the tops of the cake truffles.

Step 13 –Return the truffles to the refrigerator to chill until set, about 15 minutes.

Step 14 –Serve.
