  • 1/2 cup walnuts, broken
  • 3/8 teaspoon salt, divided
  • 1 1/2 cups (about 12-15 total) whole medjool dates, pitted
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon apple juice
  • 3-4 teaspoons water, optional

Directions

Step 1 –Line an 18×26-inch baking sheet with parchment paper.

Step 2 –In a food processor, add the walnuts and 1/8 teaspoon of the salt, cover and pulse, until finely chopped.

Step 3 –Transfer the chopped walnut mixture to a shallow dish and set it aside.

Step 4 –In the food processor, add the dates, the cocoa powder, the apple juice, and the remaining salt. Cover and process until a thick paste forms. Note: If needed, add 1 teaspoon of water at a time, up to 3-4 teaspoons total, until a thick paste forms.

Step 5 –To make the truffle, shape 2 teaspoons of the dough into a ball and roll the ball into the chopped walnut mixture to coat. Note: If the dough becomes too sticky to work with, transfer the dough to the refrigerator to chill, about 15-20 minutes.

Step 6 –Cover the truffles tightly and transfer to the refrigerator to chill, for at least 1 hour before serving.

Step 7 –Transfer the chilled truffles to a serving plate and serve.

Step 8 –Store in an airtight container in the refrigerator for up to about 2 weeks.
