Summer Greek Pasta Salad

Ingredients

  • 1 (16-ounce) box bow tie pasta
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • juice of 1 lemon
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 1 pint grape tomatoes, halved
  • 1/2 cup red onion, chopped
  • 1 1/2 cups cucumber, chopped
  • 1 cup pitted kalamata olives, chopped
  • 1/4 cup capers, optional, drained
  • 1/2 cup fresh herbs, such as mint, dill, or parsley, chopped
  • 1/2 cup feta cheese, crumbled

Directions

Step 1 –In a large pot of salted, boiling water, cook the pasta to al dente, according to the package directions.

Step 2 –Drain the pasta, rinse with cold water, and let it cool.

Step 3 –While the pasta is cooking, in a large bowl, whisk the olive oil, the vinegar, the lemon juice, the salt, the black pepper, and the dried oregano together.

Step 4 –Add the tomatoes and the red onions to the dressing mixture and let them sit for 10 minutes.

Step 5 –Add the cooled pasta, the cucumbers, the olives, the capers, and the herbs to the onion mixture and mix well to combine.

Step 6 –Top the pasta salad with the crumbled feta cheese.

Step 7 –Serve.
