Ingredients

  • 3/4 pound fettuccine or penne pasta
  • 1 pound shrimp, peeled and deveined
  • salt, to taste
  • pepper, to taste
  • paprika, to taste
  • 1 tablespoon oil
  • 2 tablespoon butter
  • 1 small onion, finely chopped
  • 1 garlic clove
  • 1/3 cup white wine
  • 2 cups heavy whipping cream
  • 1/3 cup parmesan cheese, grated
  • parsley or basil, optional, for garnish, if desired

Directions

Step 1 –Cook the pasta according to the instructions on the package.

Step 2 –Drain the noodles, but don’t rinse them.

Step 3 –Season the shrimp with salt, pepper, and paprika.

Step 4 –Heat a large skillet over medium-high heat. Add 1 tablespoon of oil.

Step 5 –Once the oil has heated, place the shrimp into the pan in one layer. Cook for about 1-2 minutes on each side. The shrimp should look pink and white with no translucency.

Step 6 –Place the shrimp in a separate bowl and set aside.

Step 7 –Using the same pan, add 2 tablespoons of butter and the chopped onion. Sauté until the onions look golden brown, about 6 minutes.

Step 8 –Add the garlic and cook while stirring until fragrant, about 1 minute.

Step 9 –Stir in the white wine and reduce until about 1/4 of the mixture remains, scraping the brown bits off of the bottom of the pan.
