Ingredients
For the crust:
- 1/4 cup butter, softened
- 1/2 cup sugar
- 1 large egg
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon lemon extract
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
For the glaze:
- 1/4 cup sugar
- 2 teaspoons cornstarch
- 1/4 cup water
- 1/4 cup orange juice
For the topping:
- 4 ounces cream cheese, softened
- 1/4 cup confectioners’ sugar
- 1 cup whipped topping
- 1 banana, firm and sliced
- 1 cup fresh strawberries, sliced
- 1 (8-ounce) can mandarin oranges, drained
- 2 kiwis, peeled and thinly sliced
- 1/3 cup fresh blueberries
Directions
Step 1 -Grease a 12-14-inch pizza pan.
Step 2 -In a small bowl, cream the butter and 1/2 cup of the sugar until light and fluffy, about 4-7 minutes.
Step 3 -Beat the egg, the vanilla extract, and the lemon extract into the butter-sugar mixture.
Step 4 -In another bowl, combine the flour, the baking powder, the baking soda, and the salt.
Step 5 -Add the flour mixture to the butter mixture and beat well.
Step 6 -Cover and refrigerate for 30 minutes.
Step 7 -Preheat the oven to 350 degrees F.
Step 8 -Press the dough into the prepared pizza pan.
Step 9 -Bake the dough until light golden-brown, about 12-14 minutes.
Step 10 -Completely cool the crust on a wire rack.
Step 11 -In a small saucepan, combine the remaining sugar and the cornstarch.
Step 12 -Stir the water and the orange juice into the sugar-cornstarch mixture until smooth.
Step 13 -Bring the orange juice mixture to a boil over medium heat.
Step 14 -Cook and stir until the glaze is thickened, about 1-2 minutes.
Step 15 -Cool the glaze to room temperature, about 30 minutes.
Step 16 -In a small bowl, beat the cream cheese and the confectioners’ sugar until smooth.
Step 17 -Add the whipped topping to the cream cheese-sugar mixture and mix well.
Step 18 -Spread the cream cheese topping over the cooled crust.
Step 19 -Arrange the bananas, the strawberries, the oranges, the kiwis, and the blueberries on top of the cream cheese topping.
Step 20 -Brush the room-temperature glaze over the fruit.
Step 21 -Slice and serve.
