Ingredients

For the pizza:

  • 1 cup all-purpose flour
  • 1/4 cup confectioners’ sugar
  • 1/2 cup cold butter, cubed

For the glaze:

  • 1 1/4 cups unsweetened pineapple juice
  • 1 teaspoon lemon juice

  • 1/3 cup sugar

  • 2 cups fresh strawberries, halved
  • 1 cup fresh blueberries
  • 1 (11-ounce) can mandarin oranges, drained

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large bowl, mix the flour and the confectioners’ sugar together, and then cut in the butter until a crumbly texture forms.

Step 3 –Press the crumble into an ungreased 12-inch pizza pan.

Step 4 –Bake the crust until it is very lightly browned, about 10-12 minutes.

Step 5 –Cool the crust completely on a wire rack.

Step 6 –In a small saucepan, mix the cornstarch, the pineapple juice, and the lemon juice until it is smooth, and bring to a boil.

Step 7 –Cook and stir the glaze until it thickens, about 2 minutes.

Step 8 –Let the glaze cool slightly.

Step 9 –In a bowl, beat the cream cheese, the sugar, and the vanilla with an electric hand mixer until it’s smooth.
