Sunny Pasta

Ingredients

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 8 ounces dried fettuccine
  • 1/2 cup sun-dried tomatoes, cut into bite-sized pieces
  • 1/2 teaspoon dried basil
  • freshly cracked black pepper, to taste
  • 2 cups chicken broth
  • 2 ounces cream cheese, cut into chunks
  • 1 cup whole milk
  • 1/4 cup parmesan cheese, grated

Directions

Step 1 –In a deep skillet or Dutch oven over medium heat, add the butter and the garlic and sauté until it is very fragrant, about 1 minute.

Step 2 –Add the fettuccine, the sun-dried tomatoes, the basil, the black pepper, and the chicken broth to the garlic mixture and gently stir to combine, making sure the fettuccine is submerged in the broth.

Step 3 –Cover the skillet and increase the heat to high. Bring the fettuccine mixture to a boil.

Step 4 –Uncover the skillet to gently stir the fettuccine mixture, then return the lid.

Step 5 –Reduce the heat to low. Simmer the fettuccine mixture, stirring every couple of minutes and covering each time, until most of the broth has absorbed and the pasta is tender, about 7-10 minutes.

Step 6 –Add the cream cheese chunks to the fettuccine mixture and stir until melted and combined.

Step 7 –Add the milk to the fettuccine mixture and stir until a smooth sauce forms.

Step 8 –Add the parmesan cheese to the fettuccine mixture and stir until it has melted into the sauce.

Step 9 –Serve the pasta garnished with more of the fresh cracked pepper.
