Super Sweet & Spicy Chicken

Don’t let anyone tell you that you can’t have it both ways! With Super Sweet & Spicy Chicken, the best of both worlds is right on your plate and it’s fantastic! Plump chicken breast nuggets are fried to a beautiful golden-brown and tossed in the most finger-licking good sweet, spicy chili sauce to become all you’ve ever dreamed of. Super Sweet & Spicy Chicken is proof that when great flavors come together, it’s always a good time. In fact, you might even call it super!

Ingredients

  • 2 eggs, lightly beaten
  • salt, to taste
  • black pepper, to taste
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • vegetable oil, to taste
  • 1 1/2 pounds chicken breasts, boneless and skinless, cut into 1-inch pieces
  • 3/4 cup sweet chili sauce
  • 1/3 cup green onions, sliced, for garnish

Directions

Step 1 –In a medium shallow dish, add the eggs, the salt, and the black pepper and whisk to combine.

Step 2 –In a separate medium shallow bowl, add the flour and the cornstarch and whisk to combine.

Step 3 –In a large deep skillet, add 3 inches of the vegetable oil and bring to 350 degrees F.

Step 4 –Individually dip each piece of the chicken into the egg mixture and then roll the egg-coated piece into the flour mixture to coat.

Step 5 –Transfer the dredged chicken to a clean plate and repeat until all of the chicken is coated.

Step 6 –Add about 7-8 pieces of the dredged chicken to the hot oil and fry until golden-brown and the chicken reaches an internal temperature of 165 degrees F, about 3-5 minutes per batch.

Step 7 –Repeat the frying process with all of the dredged chicken.

Step 8 –In a clean large bowl, add the fried chicken pieces and the sweet chili sauce and toss to combine.

Step 9 –Serve garnished with the green onions.
