Sweet & Sour Pork Tenderloin

You can have it both ways! With Sweet & Sour Pork Tenderloin, you can enjoy a takeout style favorite right at home! Savory pork tenderloin is simmered in a pineapple-infused, spicy, chili sauce for that sweet-and-sour (and spicy) flavor you have come to love. With the perfect combination of sweet-and-heat, Sweet & Sour Pork Tenderloin will be a new go-to when that takeout feeling comes around again. Little, white box not required.

Ingredients

For the pork:

  • 1 (1.75-pound) pork tenderloin, silver skin trimmed, cut into 4 pieces, and pounded to 1-inch-thick
  • salt, to taste
  • ground pepper, to taste
  • 1/3 cup ketchup
  • 1/3 cup seasoned rice vinegar
  • 1 (8-ounce) can pineapple chunks, juices drained and reserved
  • 2 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 2 teaspoons hot chili sauce, such as sriracha
  • 1 teaspoon soy sauce
  • red pepper flakes, to taste
  • 1 tablespoon vegetable oil
  • 1 teaspoon butter
  • 1/4 cup scallions, white parts only, chopped

For serving:

  • rice, to taste, cooked and warm
  • sesame seeds, to taste
  • 2 tablespoons scallions, dark green parts only, chopped

Directions

Step 1 –Generously season the pork pieces with the salt and the pepper.

Step 2 –In a bowl, add the ketchup, the rice vinegar, the pineapple juice, the brown sugar, the garlic, the hot chili sauce, the soy sauce, and the red pepper flakes and whisk to combine.

Step 3 –In a skillet over high heat, add the vegetable oil.

Step 4 –Add the seasoned pork pieces to the heated oil and reduce the heat to medium. Cook, flipping occasionally, until they reach an internal temperature of 145 degrees F and both sides are browned, about 5-6 minutes.

Step 5 –Transfer the cooked pork pieces to a plate.

Step 6 –In the same skillet over medium heat, melt the butter, while stirring, until it starts to brown.

Step 7 –Stir the pineapple chunks into the melted butter and cook, while stirring, until the pineapple is golden-brown, about 3-4 minutes.

Step 8 –Stir the ketchup mixture and 1/4 cup of the white parts of the scallions into the pineapple mixture.

Step 9 –Reduce the heat to low and simmer the sauce mixture until the garlic and the scallions have softened, about 5 minutes.

Step 10 –Add the cooked pork to the sauce and cook, while stirring, until the meat is heated through.

Step 11 –Plate the cooked rice and top it with the cooked pork and the sauce.

Step 12 –Garnish the pork mixture with the sesame seeds and the chopped greens parts of the scallions and serve.
