Taco Twist Soup

Ingredients

  • 2 teaspoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth or reduced-sodium beef broth
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 1/2 cups picante sauce
  • 1 cup spiral pasta
  • 1 small green pepper, chopped
  • 2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • cheddar cheese, optional, shredded, for topping
  • sour cream, optional, for topping
  • cilantro, optional, for topping

Directions

Step 1 –In a large saucepan, heat the oil over medium-high heat.

Step 2 –Add the onion and the garlic to the oil and cook, stirring, until crisp-tender, about 3-4 minutes.

Step 3 –Stir the broth, the beans, the tomatoes, the picante sauce, the pasta, the green pepper, the chili powder, and the cumin into the onion mixture.

Step 4 –Bring the mixture to a boil while stirring frequently.

Step 5 –Reduce the heat to low and cover the saucepan.

Step 6 –Simmer until the pasta is tender, about 10-12 minutes.

Step 7 –Serve with your favorite toppings.
